Opened by three-Michelin-starred twin chefs Jacques and Laurent Pourcel, this heritage villa in the city centre offers Mediterranean French gastronomy with wonderfully unexpected pairings like shrimp Carpaccio with a dijon-vinaigrette sorbet. Look for subtle winks to local cuisine as in the offal spring roll that accompanies stewed Miéral pigeon.
