Regenerative farm tour and fermentation workshop

Learn about fermentation and sustainable agriculture at Fattoria Bucolica, an urban farm where my family produces olive oil, wheat, eggs, aromatic herbs, jams, pickled vegetables, and creative drinks. During this hands-on workshop, I’ll show you how to make some of our seasonal ferments—and we’ll taste our creations, of course. • We’ll start with a farm tour, where I’ll show you how my brother and I approach regenerative and organic agriculture. • Next, we’ll gather in the farmhouse for a demonstration of seasonal ferments featuring Tuscan flavours. • We’ll taste three traditional appetizers, reinvented through fermentation, alongside three fermented drinks such as wine and kombucha. You’ll gain new fermentation skills and an appreciation of how young Tuscan farmers are adopting creative new approaches to agriculture. Whether you’re a first-time rider or a seasoned equestrian, join us for a journey along Rome’s most storied highway. • Start with a warm welcome and safety briefing before you meet your horse and saddle up. In minutes, you’ll be walking along the Appian Way, on which construction began in 312 B.C. • Enjoy a scenic 5-kilometer ride past ancient landmarks through lush landscapes. We’ll share stories about the monuments, and the pivotal role the Appian Way played in the rise of the Roman Empire. You’ll leave feeling as if you’d been transported into ancient Rome, where every corner holds a story from centuries long gone. Etna Morning or Sunset - Trek & Lava Tunnel with Gear

Surrounded by a lunar landscape, we will learn to understand and explore Mount Etna, a UNESCO World Heritage Site, known for its beauty and uniqueness. Strolling along the largest volcano in Europe, you will admire the imposing volcanic structure with its typical flora and fauna. We will visit one of the most fascinating sites where you can watch the sunset together (you will not see the sun setting but only appreciate the colors). We will enter a lava tube, created during the volcano's eruptions, equipped with a helmet and flashlights. It will be fascinating to discover not only their creation, but also the secrets that they hide so jealously in their darkness. You will immerse yourself in our little world not only made up of work but of history, nature, passion and many beautiful farm animals. We will walk through the fields in the company of our dogs and we will explain how we were born and how we got to this day, our philosophy and the reasons for our choices. We will observe the vineyard and its phases, the olive grove where the sheep graze in the beautiful meadow below and we will personally go to get to know them one by one. We will show you our cow Vilma running freely in the fields and the happy hens producing red yolk eggs. We will show you the cellar where we produce the wine and where we store the exquisite extra virgin olive oil. Then we will all sit together to taste the wines, oil and cheeses that we produce naturally with so much passion.

Please note: This beautiful horseback riding experience is made for beginners and first timers in horseback riding. Its about nature, stunning views and making friends with our horses. That means walk only! IF YOU ARE AN ADVANCED RIDER, LOOKING FOR A FASTER AND MORE SPORTY RIDE WITH TROT AND CANTER; PLEASE LET ME KNOW IN ADVANCE! If possible you can switch to another group with a different start time. Please ask for that only if you are 100% sure that your riding skills are more than sufficient and if you are 100% safe with posting, light seat and an english saddle. Generally the weight limit for our horses ist 85kg (for advanced and beginners), please ask for exceptions! When you arrive at our reception our receptionist will show you the way to the stables. Meet your horses and make friends with them. We will show you everything you need to know. And then let`s go! On our different routes, we pass by the incomparably beautiful and varied landscape of the Crete Senesi and the Val d'Arbia. Breathtaking trails in all directions are waiting to be explored. You will take home unforgettable memories of the Tuscan nature and the contact with your horse as a a touching experience. For your planning, calculate 2-2,5 hours on horseback, and 3 hours for all together. Kids aged 6 and over are welcome. Please let me know in advance the age of your kids.
