For great restaurants, clubs, and historic sight seeing. You must take at least one trip to St Augustine if you are in Palm Coast. Its only 20 miles north. Too many restaurants and Clubs to list. There is a great walking area right next to the historic fort. Go see it.

The Beach! And then there are many good restaurants. But at least drive by the Speedway - it is spectacular. The Tours are really good and affordable. Even if you are not a Race Fan, its an impressive thing to do during your stay.
