From the top of the (long) shady eucalyptus lined drive, the panoramic views over the Mediterranean Sea prepare you for the nature induced solace you can expect at this historic old winery with authentic features from the 18th century. Nestled into the valley on some 6,5 hectares of private land within a protected area of the Montes de Malaga natural park, you’ll forget that you are within 30 minutes of the beaches and the cosmopolitan city of Malaga. Upon entering the grand courtyard at the heart of the cortijo you may even forget what century it is, imagining the horses and donkeys that were housed here during the bygone days of winemaking on the estate.
Your hosts, however, will quickly bring you back to present with a warm welcome and generous tapas and wine on arrival. Every visit to this family run eco farm includes complimentary concierge service to help you get the most from your holiday, and the culinary services provided by Chef David Palacios of the on-site host family are truly first rate. Cortijo Juan Salvador offers two separate lodgings to guests, La Higuera and El Almendro; both with stylish contemporary décor and 3 double bedrooms, private outdoor terraces, fully equipped kitchens and open plan dining-living rooms. Both also feature private entrances, and shared access to the cosy plunge pool with sun lounge. With additional opportunities for group dining or excursions you can be as private and solitary or as social as you like.
LA HIGUERA: La Higuera, built on the foundations of the old farmhouse using local materials and by local contractors, will transport you back to its rural Andalusian roots. The accommodation has two spectacular terraces, with views of the beautiful surrounding landscape, where guests can enjoy the Mediterranean sun or take shelter from the sun under the porch of reeds. The interior is also very special: impressive entrance hall with slender semicircular arch, doors dating from the seventeenth and eighteenth centuries purchased from antique markets in the area, terracotta floors, and marble bathrooms. All decorated with Spanish, Dutch and Oriental antiquities, with spacious rooms to accommodate up to 8 persons. It consists of 2 triple bedrooms, 1 double bedroom, 2 bathrooms (organic cotton towels), an open kitchen, a living room with TV, heating appliances and two large terraces (140 m²).
This secluded organic farm rests peacefully among the hills of the Montes de Malaga, offering complete privacy yet proximity to the beaches and the cosmopolitan city of Malaga (30 min). Opt to have some or all of your meals prepared for you at the cortijo. A first rate chef service is available or you may help yourself to the farm produce, and with acres of fruit trees and well-tended gardens with seasonal vegetables, fruits, herbs and edible flowers you get the freshest possible organic ingredients either way.

Driving instructions: From the A7 from Málaga (airport) direction Almeria take exit 246B direction Olias / Comares, then first exit to the right direction Olias / Comares, drive on the A7001 for 15km (you will pass Olias after 10km and continue for 4,5km after passing the village) until you get to cross road direction Colmenar / Venta Galwey, there you take a left turn diving now on the Ma-3103 after only 50m take the concrete sub-road directly left, after 100m you turn right, now see the Cortijo right in front of you, follow the eucalyptus lane for 700m until arriving to the property.

As an organic farm, and given David’s passion for food and cooking, serving local, home-grown organic produce is one of our specialities and sources of pride. We have many fruit trees and seasonal fruit and vegetables from the garden, which David uses in cooking for guests if they wish, or they may also wander through the many natural acres of the property and select fruit, citrus and veg for themselves. We carefully conserve our water, sourced from a well and stored in a reservoir tank, though the supply is sufficient for liberal use by guests. Additionally, kitchen waste is composted, while paper and cardboard, glass and plastic are recycled to minimize landfill.
Chef service: Young, creative and effusively enthusiastic about food, David Palacios renounced a career as a commercial airline pilot to pursue his culinary passions. David honed his cooking skills training in Maastricht, Netherlands where he developed the gourmet flair to match his creative instincts. David then moved with his family to Andalucía, his father’s home-land, where he grows fresh organic produce and edible flowers for use in his gourmet creations. With a deep knowledge of traditional Andalucía cuisine, David adds a modern twist to the numerous unique dishes he creates for guests at Cortijo Juan Salvador. Booking conditions Reservations and deposit After making a booking request in which you accept these booking conditions, you will receive an email of confirmation in case the accommodation is available. Upon reservation we require a non-refundable deposit. For more information about deposits, please see "Payments" below. Upon receipt of the deposit, Cortijo Juan Salvador will issue a final confirmation by email. The party to whom the confirmation is addressed is wholly responsible for the entire amount of the reservation, and for the compliance of members of your party with these booking conditions. Reservations cannot be accepted from persons younger than 18 years at the time of booking. Cortijo Juan Salvador reserves the right to refuse bookings without explanation. Payment In order to guarantee your reservation, Cortijo Juan Salvador must receive 30% of the total booking amount as a non-refundable deposit when booking more than 9 weeks in advance. The balance of the reservation cost must be received by Cortijo Juan Salvador no later than 9 weeks prior to arrival. Parties booking less than 9 weeks prior to the date of arrival must pay the full booking amount at the time of reservation in order to confirm the booking. Failure to pay the balance (or total amount, as the case may be) on time will constitute cancellation, and you will be subject to cancellation charges. Receipt and banking of any deposit does not constitute acceptance of any booking. A binding contract exists only when Cortijo Juan Salvador issues an email of confirmation. Prices All prices are in euro (EUR). The properties are fully furnished and equipped. The rental price includes bed linen but excludes €75 final cleaning services. A security deposit of €250 is required to cover the cost of any damage or breakages. This security deposit is payable in form of cash and must be presented to the key holder on arrival. In cases when damages exceed the security deposit amount, the renter is obliged to pay the full cost of the damages. The deposit will be returned in full, minus any costs incurred, upon departure. Alterations and cancellations by Cortijo Juan Salvador In the unlikely event that it is necessary to make an alteration to or cancel the holiday accommodation specified in the letter of confirmation, Cortijo Juan Salvador will inform you as soon as possible and, if requested, will try to arrange an alternative of similar type and standard as originally requested. If the alternative holiday accommodation is not acceptable, we will refund in full all monies paid and shall be under no other liability.
Cancellation by you
Any cancellation by you, for whatever reason, must be made in writing to: Cortijo Juan
Salvador, Buzoneria Venta Galwey, 29013 Málaga, MALAGA, Spain. Cancellations
become effective upon the date received in writing by Cortijo Juan Salvador.
Cancellations received 9 weeks or more prior to arrival, will be subject to a cancellation
charge amounting to the total of the deposit paid. Cancellations received within 9
weeks prior to arrival or during your stay, or if Cortijo Juan Salvador cancels the
booking due to non-payment, will be subject to cancellation charges amounting to the
total rental cost. Cortijo Juan Salvador therefore recommends that you consult your
insurer about the possibility of cancellation coverage.
Amendments by you
Upon receipt of your confirmation email, you are responsible for checking the
correctness of the rental details. If, after your booking has been accepted, you require
us to amend it in any way, or to re-invoice you, Cortijo Juan Salvador reserves the right
to charge an amendment fee of €100 (one hundred euros) per booking. Cortijo Juan
Salvador reserves the right to treat a change of accommodation and/or holiday dates as
a cancellation of one holiday and the booking of another.
Number of people using the holiday accommodation
The number of people staying in the accommodation must not exceed the number of
sleeping places, except in the case of infants under two years. In the event that the
maximum number is exceeded without prior agreement, Cortijo Juan Salvador
reserves the right to refuse or revoke the booking at our sole discretion.
Representatives of Cortijo Juan Salvador shall be allowed access to the holiday
accommodation at any reasonable time during any holiday occupancy for the purpose
of inspection and maintenance.
Arrival and departure
Guests staying at Cortijo Juan Salvador must check in between 4:00 pm (16:00 hrs.) and
7:00 pm (19:00 hrs.) on the holiday start date. The accommodation must be vacated by
10:00 am (10:00) on the last day of the booking. Cortijo Juan Salvador must be informed
if arrival or departure times vary from the above.
Pets are not allowed without prior written permission.
The accommodation will be thoroughly cleaned the start of the rental period. The
accommodation must be left clean (normal usage) at the end of the rental period.
Behaviour The person signing the booking letter of confirmation is wholly responsible for the correct and decent behaviour of all members of his/her party. Should you and/or your party behave in a manner deemed unsuitable by Cortijo Juan Salvador, we retain the right to request that you and your party vacate the accommodation. In case of damage, the renter will be held responsible for all costs incurred. We recommend that guests take out appropriate travel insurance that will cover damage/breakages in the rented accommodation. Security and Valuables Cortijo Juan Salvador cannot be held responsible for the loss of valuables left in the accommodation. Your responsibilities You must maintain the holiday accommodation and all furniture, fittings, effects, facilities and equipment in the same condition as at the commencement of the holiday, and leave the holiday accommodation in the same state of cleanliness and general order in which it was found. You are responsible for all damage or loss which occurs to the property and its contents during your occupation, and will be responsible for paying appropriate compensation in the event of breakages or damage. Liability Cortijo Juan Salvador shall not be responsible for the death or personal injury of you or any person in your party at the property unless this results from gross negligence or deliberate misconduct. Cortijo Juan Salvador shall not be liable for any loss, breach or delay due to any cause beyond our reasonable control, including though not limited to act of God, explosion, flood, tempest, fire or accident, war or threat of war, civil disturbance, acts, restrictions, regulations, by-laws or measures of any kind on the part of any governmental or local authority, strikes, lock-outs or other industrial actions or disputes or adverse weather conditions. In case of any such event, Cortijo Juan Salvador shall be entitled to treat the contract as discharged. In the event of such discharge, our liability shall be limited to the return of sums paid to us in respect of the unused portion of the holiday calculated on a pro rata daily basis. Cortijo Juan Salvador cannot be held responsible for breakdown of mechanical equipment such as pumps, boilers, swimming pool filtration systems, etc., nor for failure of public utilities such as water, gas and electricity. Nor is Cortijo Juan Salvador responsible for noise or disturbances which are beyond our control.

Parents Pedro and Riny moved from Pedro’s native Andalucía to Riny’s home town of Maastricht, Netherlands. Son David spent his childhood between both countries and later became a commercial airline pilot, but gave up that career to pursue his culinary passions. He moved with Spanish wife Rosa and son little David to the farmhouse in Andalucía to help his parents develop the farm and rental business.
David in the meantime gained professional training and now works as a successful private gourmet chef off site, as well as for guests at Cortijo Juan Salvador. He uses the organic fruit and vegetables they grow themselves in the dishes he serves, and loves to garnish with edible flowers.
