The course is around making traditional Focaccia that the participants can do in their own home after the experience and extravirgin olive oil tasting in our local olives mill.

9.00 am
We meet in Chiavari for a morning coffee and to buy the products we need in the local market near the railway station.

10.00 am
Welcome to my house in Leivi, a very quiet place surrounded with olives trees with a breathtaking sea view.

The masterclass starts: I will first explain how to make a dough, which flours to choose, how to ripen the dough, at which temperature, etc. and then we will prepare our own dough and let it rise.

11.30 am
In the meanwhile we'll visit together the local olives mill where Mauro, the owner, will let you taste local multi-award winning extravirgin olive oil and where if you desire you can buy it. In the olives harvest season in autumn we can see how the mill is working to get oil from the olives.

13.00 pm
We bake focaccia and we eat it with a glass of white wine Vermentino outside in the garden by warm weather or in front of the fireplace in the cold season.

14.00 pm
The masterclass is ending with a cup of icecream and an italian espresso.

My house is an ancient villa of the end of the 1800 with a beautiful garden that you can enjoy in the good season while eating focaccia and sipping a glas of white wine.
The cultivation of the olives in Leivi is a family tradition: the local olives mill is the place where all the producers bring their olives to let them break and get extravirgin olive oil from them.

    This was an experience you don’t want to skip if you have a day to visit Chiavari. We met up at a cafe inside a church building in front of the train station and strolled to the farmers market to learn what’s available. Valentina’s house was up on the hill overlooking the valley with lots of regional olive trees. Learning this authentically special Genovese focaccia is something you could not easily do otherwise. It will add indisputably invaluable skills to your culinary repertoire.

    We had a fantastic experience on the whole, we learnt the art of making focaccia as well as experiencing how pesto is made the traditional way. Valentina was very accommodating to all our requests and is undoubtedly a great chef, but an even better person! We thoroughly enjoyed it and will definitely return in the future, thanks again for everything!

    We had the most wonderful day. We learnt so much about working with flour, making dough, focaccia con formaggio and pesto. We were so lucky with the weather and sat out on the patio looking out to the coast, eating and drinking with some of the family and various pets keeping company. It was delightful and would highly recommend.
