Pairing is creating a harmony between a drink and a food, in this case we will use two exquisite elements that we consume daily but that together lead us to an experience of unique flavors, Chocolate and coffee.

Developing the palate is immersing ourselves in a journey that will lead us to find happiness through taste. My name is Christian Vásquez specialist in chocolate rheology and Barista trainer for the national competition with Borola Café. My mission is to lead people to find happiness through taste and what better way to do it than with a sensory journey between the best coffees in Mexico and chocolate?

Maridar es crear una armonía entre una bebida y una comida, en este caso usaremos dos elementos exquisitos que consumimos a diario pero que juntos nos llevan a una experiencia de sabores únicos.

Desarrollar el paladar es sumergirnos en un viaje que nos llevara a encontrar la felicidad a través del sabor. Mi nombre es Christian Vásquez especialista en reología del chocolate y entrenador de Baristas para la competencia nacional con Borola Café. Mi misión es llevar a las personas a encontrar la felicidad a través del sabor y ¿qué mejor manera de hacerlo que con un viaje sensorial entre los mejores cafés de México y el chocolate?.

    A good foray into complementing coffee flavor profiles with chocolate and fruit as counterpoints. I'm more of an espresso person so perhaps was out of my element with the filter coffee, but it was decent coffee and very interesting conversation and discussions about how flavor complement each other. We also learned and practiced pour-over methods.

    It was a great and fun opportunity to learn about flavors, smells and pairings. It was very stimulating and we left feeling like we got a new understanding on coffee and chocolate! The chocolate we ate was interesting but nothing out of the ordinary and the coffee was much better.

    I did this experience with Gabi and she was the best. I would say my palette is average but she warmly brought out the best in my abilities, tasting everything to make a beautiful balance. Everything was so delicious, the coffee was incredible. However my favorite part is I came away at the end feeling like a could make a barista level pour over!

    Our experience wasn't bad, I just thought the description and pictures were misleading. This is primarily a coffee tasting. There were no artisanal chocolates as shown in the pictures, just some chocolate chips and a bit of fruit to dip in melted chocolate. The host was very nice and communicative.

    Gabby was a wonderful host and provided a perfect morning activity to get to know Mexico City’s coffee culture, Mexico’s different types of coffee and Mexican chocolate. Her explanations were thoughtful, interesting and very well-paced. A highlight was learning the proper technique to prepare fresh pour over coffee that maximizes the flavor profiles of the beans. We highly recommend this activity to coffee lovers.

    It was an amazing experience. To me this program was the best one among all the AirBnB activities in Mexico city. I experienced diverse matching between food materials like chocolate, fruits, spices and coffee. These kinds of matching experiment were really interesting and informative. Surely, I would like to recommend this activity to other tourists.
