Dear pizza aficionados, Join me for an educational, hands-on and tasty experience in Neapolitan pizza! Our adventure begins with a brief discussion of dough basics followed by actually making some using only our two hands . I’ll guide you through process of mixing (flour, water, salt, and yeast) to dividing and shaping the dough to create your own beautiful dough balls. Together, we'll stretch some dough balls into pizza pies and set your inner Pizzaiolo free. Following all of our hard work, we’ll enjoy an authentic Neapolitan pizza straight from my wood-fired oven. Feel free to bring your own beverages; however, one local brew will be provided as long as you are of the appropriate age. Please note: once we inoculate the dough with yeast it becomes a living entity influenced by warm/cold weather, humidity, etc – due to these environmental factors, the order of our experience might need to change slightly.

Hey all, it's Vinny Vincenzo and I am a pizzaiolo in Philadelphia. I used to make ~2,000 lbs of a dough and ~1,000 pizzas weekly. In September, I became the 2019 USA Caputo Cup champion in the Neapolitan pizza category, and have been featured in the NY Times and other publications. I specialize in using natural leaven (wild-yeast) to make sourdough breads, pizzas, etc.. I'll be using my wood-fired oven to make us delicious homemade, Neapolitan-style pizzas!! (Pls note: for the sake of time, we'll be using commercial/baker's yeast at the experience I've lived in Europe, the Middle East, South America & have traveled to over 35 countries worldwide. I welcome you to explore the many cookbooks I've gathered from around the globe as we discuss bread/pizza dough basics, have fun making dough by hand, and enjoy fresh wood-fired pizza

Most of the experience will be inside my factory-lofted apartment which houses my collection of worldly treasures, endless cooking books and my beloved plants. Towards the end of our session together, we'll step into my garden courtyard to bake pizzas in my wood-fired oven!
