I use the dried noodle not include egg and any animal product. The gyoza wrapper is also premade. We don't make gyoza wrapper from starch. My name is Sakiko. I am doing the Vegan Japanese cooking lesson in Kyoto. I use to worked at Japanese Restaurant as a Sushi chef in Walt Disney World. And now I work at the university as a secretary on weekdays and doing cooking lesson on weekend. Japanese food is using soup stock made from normally bonito flake so it is difficult to find Vegan Japanese food in Japan. So I would like to help by educating on high quality, great tasting, healthy, and convenient vegetarian focused Japanese cuisine.
