体验内容

这是制作DASHI汤的烹饪教室。具体内容为,刨削干鲣鱼片(使用日本国九州的鹿儿岛县枕崎产干鲣鱼)、干鲣鱼片和海带做DASHI汤,然后品尝DASHI汤。此外,我想让大家体验自己做DASHIMAKITAMAGO(日式卷鸡蛋)。希望大家回国以后,如果有DASHI汤的材料的话,也试一试自己做DASHI汤。所以,我想给大家介绍做日本料理时必不可少的DASHI汤的UMAMI。刨削干鲣鱼片这是日本传统的饮食文化之一。刨削干鲣鱼时的唰唰的声音,听起来就让人开心。从前,刨削干鲣鱼片是日本家庭里的日常生活的一部分,而现代的很多年轻人都没有刨削干鲣鱼片的经验。真是遗憾的事情。对了,我还要向大家介绍关于日本的UMAMI的材料,干鲣鱼片和海带的小知识等。大家可能知道北海道产的海带在日本是最有名的。可您知不知道同样北海道产的海带,根据采取的地方,海带的味道也是多种多样的。不信的话,那您品尝一下一口自己做的DASHI汤,就知道了!如果您喜欢制作的DASHI汤的味道的话,就会给您留下深刻的印象。我希望大家能够制作出自己最喜欢的味道,给您的旅行增添更多的感动和美好的回忆。烹饪结束后,就让我们一起品尝吧。如果在这里的体验能成为您在日本的美好回忆的话,我将感到非常荣幸。

Great experience for everyone with a real interest in Japanese food culture as dashi is THE basic ingredient for so many dishes. You learn how to make and taste a real, traditional one and you hopefully never want to use the industrial powder stocks again! Yuko can also give a lot of background information on both kombu and katsuobushi. An eye (or better taste bud) opener was the tasting of 3 different kombu sorts from different regions! Amazing, delicious and fun experience, highly recommended.

Everything about this was great. Yuko was very knowledgeable about dashi and everything that goes into making it well. Maki provided excellent English translation and also participated in the class. Both of them made me feel right at home. After shaving the flakes and making the dashi from scratch, you make maki tamago (omelette rolled in the square pan) and miso soup using the dashi you just made. On top of that, together you eat it all (plus rice and other items) which amounts to a complete meal. I wasn’t expecting to eat so much! Recipes and other information are provided. Even if you don’t think you will make dashi back home, the experience itself was excellent and I highly recommend it!

My wife and I enjoyed every moment. Similar to a wine tasting but with dashi. The instructor is knowledgeable and comes from a family background expert in kombu and bonito. We made a couple dishes that were practical and easy to replicate back home. High recommend anyone seeking more info about the craft of making dashi.

I had the best time with Yuko and Hiromi! I seriously could not have enjoyed myself more! From cooking to chatting, it was so pleasant! Yuko shared the process of creating katsuobushi and her knowledge of dried foods is extensive. We cooked three dishes and shared a delicious meal with many personal touches from Yuko. I highly recommend this class for anyone with an interest in Japanese cuisine! I guarantee you’ll come away with a greater appreciation of Japanese food and possibly some new friends!

What a fun way to spend an afternoon! You get to make local miso, and learn about the ingredients from Yuko, who is an expert. After making dashi, miso soup, and an omelet, you get to enjoy the meal together at the end.
