Cooking classes in Mexico can be a wonderful experience, but what happens when you return home and can't find the ingredients to make it on your own? I've got you covered.
We'll meet at my home in Condesa to prep and cook our meal together with a mix of traditional cooking equipment while teaching you how to swap it out with alternatives that are staples in every home kitchen.

We'll learn how to prepare* (and chow down on):

/ Classic Tinga (chicken or veggie)
/ Tamales (savory and sweet)
/ Chilaquiles (verde)
/ Agua fresca (varies according by season) with immune boosting ingredients

I'll also give quite a bit of history about the dishes, a brief knife handling demo, facts about our ingredients, cooking techniques, uses for would-be-organic waste, nutrition and gut health information, as well as a digital recipe book and global guide to Mexican ingredient shopping.

I started working in my grandfather's butcher shop at the age of 6, wrapping customers' packages in the same style as he had since the 1940's. Surrounded by farms, dairies, and homesteads, we spent our free time in nature, hiking, camping, fishing, and hunting. The dichotomy of the two food systems—self-sustainable vs. supermarket—inspired me to only eat the things I could grow or hunt, and cook myself.

I've maintained some form of this ideology for the past 29 years while traveling the world to gain knowledge and hone my skills. At 21, I began making the world my culinary classroom by making pasta with Italian experts in Florence, apprenticing with a Four Seasons/Cordon Bleu chef, sous cheffing a test kitchen in NYC, mastering luau emus with native Hawaiians, and now pressing tortillas with the abuelas and street food masters of CDMX.

Just minutes walking from Bellas Artes in Centro Histórico, you'll join me in my kitchen loft in a bank building which dates back to the early 1900's. You'll be surrounded by some of the best street food and better kept secrets in the city: 2 blocks from the Zócalo, around the corner from la Pastelería Ideal, el Moro, and one of the city's most exciting markets, Mercado San Juan (the "exotic" or "insect" market) where most of our classes begin.

    We loved this experience so much that we asked Tim to come back and do a private cooking lesson for our friends on New Years! Tim is a warm, funny and wonderful human. He will let you participate as much or as little as you want with no judgment. He learned how to cook from grandmas and his passion for food shows. Don’t hesitate to take this class!

    Our experience with Tim was excellent! It was just like hanging out with a new friend while cooking and learning about Mexican cuisine (ingredients, history, etc). Everything we ate was delicious! Book this experience and bring your appetite.

    We had such a fabulous time with Tim, we cannot recommend him highly enough! He took us to the market and had us taste loads of delicious new foods we hadn't tried before. We had crickets, mezcal, amazing fruit etc. Then we got set up to cook and made incredibly tasty food. He is very knowledgeable, a good teacher, good company and very friendly. His place is great and the perfect location for a cooking class. After the class, he sends you a file with all the recipes and more. All easy to recreate after the lesson. Thank you Tim! Tim's class makes for a great gift.

    Tim was a wonderful host. We learned so much in his class and had a blast. We tried things we’ve never made or tasted before. Tim has same amazingly creative dishes that were easy enough that we will definitely be recreating at home. He has a wealth of knowledge that was really great for us to learn a bit as we cooked.

    This is an amazing experience, Tim went above and beyond our expectations of a cooking class. we meet at the market and picked up some fresh fruits and looked at the meet, fish and tried a sample plate of bugs. Tim’s house is a great set up with a big table for you to prepare the food, and of course eat it. Time flew as Tim has great knowledge on each food we are cooking and a great conversationalist. We learned so much about other uses for the food along with their origin in Mexican culture and history. The food is great and came out fantastic. Really great flavors and gives you confidence to try such dishes at home! You will not leave here hungry after eating the three delicious dishes. this is a must do activity while visiting the city. it is an evening very well spent in the company of a great person and chef! Tim also gave us great food recommendations and is really helpful for people not familiar with the city and want a local experience.

    If you are looking for a fun thing to do in Mexico City then definitely book this cooking experience with Tim. I booked this last minute to celebrate my birthday and it was a blast. We toured the market which I wouldn’t have been able to do fully on my own and even tried some crickets, and then headed back to his place to start cooking. Throughout the whole experience Tim was engaged, interactive and shared personal experiences. The food was absolutely amazing. Tim found out was my birthday and even went to the store to get a special treat for me. This is a must do in Mexico City
