Los invito a adentrarnos en el ancestral mundo del cacao.
Primero una platica breve de la cultura del cacao en México. después disfrutaremos de una cata degustacion de aromas, texturas y sabores del alimento de los dioses para finalizar conocerán y practicaran la elaboración artesanal del tostado, descascarillado y molienda del cacao; realizando una emblemática receta de la Chocolatería Nina.

Todo comenzó hace 15 años cuando comencé el rescate tradicional artesanal de mi bisabuela en la elaboración de chocolate y usos del cacao desde 1934.

Horacio was very nice, but he told us the day of that unfortunately his translator was unavailable so we had to use google translate the entire time. This really dampened the experience because of the language barrier and made things impersonal. The location of his shop is not in the best neighborhood and is completely open to the street. Some random customers would interrupt our experience to buy things from his cafe. The size of his shop is very small and cramped. The table we sat at for the majority of the experience could really only comfortably sit 3 people. (good thing our party was 2 + Horacio) The majority of the experience was just smelling, touching, and tasting many ingredients used in chocolate. Then Horacio asked us if the taste was short, medium, or long. This was interesting at first, but got boring rather quickly. Not sure if it would have been different with a translator. Peeling cocoa beans was fun! However when we were shaping our chocolate into the finished product, we were instructed just to shape them into balls. This was not aesthetically pleasing at all. And after I put them into my backpack for the rest of the day, the chocolate broke apart into tiny pieces and became like a chocolate powder... One major thing I did enjoy about the experience was that the ingredients used and the chocolate we made was pure and natural, without any added oils or sugar. His shop also doesn't have a bathroom, so when we needed to use the bathroom, Horacio walked us down the street to his actual home to use his personal bathroom. This was very hospitable of him but also not the most pleasant experience.

Une expérience enrichissante, à la découverte du cacao, de son histoire à sa fabrication. Après avoir consommé du chocolat toute ma vie, aujourd'hui, j'ai fabriqué mon propre chocolat à partir de fèves de cacao.

A truly wonderful experience: Horacio takes the time (in my case over five hours, but this is totally adjustable to the visitor's wishes and schedule) to connect the chocolate making process to Mexican culture. It includes a detailed tasting experience that approaches you little by little to the cocoa bean to fully appreciate the complexities of its taste . Also includes a fabulous hands-on workshop to create your own chocolate wherever you are. A memorable experience which made me feel as a friend and (in the end) as a newly made expert. I highly recommend this workshop!

It was a really nice, authentic and intimate workshop. It was really interactive. It was great to have it in a local shop rather than in some kind of factory.

Horacio created a great learning environment. He is very knowledgeable and has a lot of experience in the chocolate industry. It is a great learning experience to see how what we love so much is made. I would definitely recommend!
