Cheese Making & Local Cheese Tasting! Join us and learn a very simple recipe for making easy, homemade, delicious cheese along with a Locally-Made Cheese Tasting and discussion on cheese basics! We will begin by visiting the Goat Barn to see where the magic is made! We will then go inside and begin making a simple mozzarella cheese that we will eat in class. This will take about 2 hours then we will take a short break. Next, we will discuss different types and styles of cheese and will end with a tasting of different types of locally sourced cheeses: fresh, brined, washed-rind, bloomy-rind and blue cheeses. Topics covered will include raw vs pasteurized milk, milk sources and sanitation, cultures, rennet, curd handling, salt/brines and aging cheese. This is a workshop where you will watch the process of making basic cheese up close. You will be able to taste and feel the curds at each stage in the process. We will include gluten free crackers and sides to go with the cheeses.

Christina has worked as an Organic Farmer, Hide Tanner, Veterinary Assistant, Soap Maker, Cheese Maker and Educator since 2003. She co-owns/operates Fun Frolic Farm with her husband in Burnsville NC, where she hosts a variety of workshops on sustainable living, dairy goats, soap and cheese making, traditional hide tanning and much more. Christina has taught and demonstrated for both public and private schools, national parks, state parks, festivals, community colleges, museums and a variety of Primitive Skills events.

This experience will be held in the warm, cozy kitchen at our homestead near Burnsville NC. We are an operating homestead farm and have dairy goats on site. We make cheese and goat milk soap and lotion on the farm. The farm also has river frontage and you may enjoy the South Toe River or visit the goats while you visit!
