You will experience how to breakdown a fresh whole fish from the Okinawa central fish market with a Japanese knife made in Okinawa. You will also explore several techniques used in preparing raw fish in Japanese professional restaurants such as yubiki (hot water), yakishimo (torch) and kobujime (Kelp cure). You will finish this class by creating and enjoying your own sashimi set meal with rice and miso soup.
