We'll start off with an introduction about our distillery history and North Carolina's long history of moonshining. We'll talk about distillation in general (what defines a spirit, etc.), then lead you through our state-of-the-art distillation equipment and the distillation process. Then we'll head back into the tasting room for a tasting of our moonshine and the rest of our spirits, as well as our organic bitters. NC law restricts us to six 1/4 ounce samples of a spirit we distill; unfortunately we cannot make cocktails at our distillery...so you'll head over to The Top of The Hill Restaurant & Brewery, Chapel Hill's most iconic bar, for a moonshine cocktail (or you can choose another spirit, or some of our award winning beer) and split an appetizer. You can also purchase our spirits, bitters, and some mixers at our distillery, and we'll give you some cocktail recipes.
Scott and I are founders of TOPO Organic Distillery, NC's only USDA Certified Organic distillery! Founded in 2012, we are a grain-to-glass distillery; we distill our award winning moonshine, vodka, gin, and whiskeys from organic NC soft red winter wheat from farms less than 100 miles from us. Our spiced rum is distilled from organic evaporated cane juice and molasses from Florida (there's none in NC.) We were named one of "The South's Best Distilleries" by Southern Living, and our vodka is the only Good Foods Award winner in NC; just one of the many medals and awards we've received.
You'll get to select an appetizer from our extensive list; there's something for everyone.

We'll do the tasting at the distillery. Our tasting room is conditioned, but our distillery work space is not. Be sure to wear a coat in the winter! We do have restrooms, and our space is wheelchair accessible. The Top of the Hill Restaurant & Brewery is fully conditioned, and has an outdoor patio on the top floor of the building overlooking Franklin Street, Chapel Hill's main drag. There is an elevator to access the restaurant.
You don't have to drink all the spirit samples, so at the most you'll have a total of 1.5 ounces of liquor, which is the equivalent of one cocktail at a bar. But to be safe, you may want to use Uber!
