We will take you on a tour of the chocolate making process starting at the cocoa trees, tasting the fresh cocoa fruit, fermenting, drying and roasting the beans, winnowing and stone grinding small batches of chocolate, You will learn how we turn cocoa beans into chocolate bars-step by step.
I am the founder of Mindo Chocolate Makers, the first small-batch chocolate maker in Mindo, Ecuador. Since 2009 I along with our guides have taught thousands of people from all over the world about how chocolate is made. We have two small-batch chocolate "factories" in Mindo, Ecuador and Dexter, Michigan. I have level 2 certification in chocolate tasting from the International Cocoa and Chocolate Institute, I am trained in cocoa bean grading from the FCCI Fine Chocolate and Cocoa Institute and a graduate of Ecole Chocolat. We love to share the thrill of making chocolate bars with others.
We will meet at El Quetzal de MIndo in Mindo, Ecuador. We start exactly on the hour. If you arrive late we will accommodate you and can join the tour at the top of the next hour. Last tour will be at 5:00 pm.
