This is a cheesemaking experience, We will explain details about the milk production in PR, talk about the milking cows, and the appreciation or character of an aged cheese and finally will make one of our five varieties of cheeses. Our cheesemaker will decide the cheese recipe we will be preparing that day. During the morning our cheesemaker will explain the process of cheese and you will get to see the cutting of the curd. When making your own cheese you can add spices; we will provide a wide selection of herbs and spices and some letters to identify your cheese with your initials. Afterwards we will explain how to mix and mold the cheese. Later you will try our products and our cheeses paired with a glass of wine. In two months time, after the cheese has aged we will ship it to you. You can enjoy it as soon as it arrives.
I am a Microbiologist, specialized in consumer products and quality assurance. I am also the Founder and President of Quesos Vaca Negra, the first aged cheese factory in Puerto Rico. We make aged cheeses with raw milk using old European recipes. We also have an artisanal yogurt production that features tropical flavors like coconut, piña colada, guava, papaya and traditional flavors like vanilla and plain yogurt. We want you to enjoy the wonders of how milk is transformed into an aged cheese, meanwhile taste our cheeses paired with wine.

We will meet at Quesos Vaca Negra; a small artisanal cheese and yogurt factory located in Hatillo, the town where there are more cows than people. We have a cheese shop with an area that helps about 26 people in the tour.
