You will learn how to work with chocolate and design an amazing truffle! Keep in mind, we work only with dark chocolate:) Using different techniques we will make 3 different types of truffles incorporating various liquors and wines, such as Rum, Port, Kahlua and others (your choice:)). You will create a unique truffle that resonates with your personality. In the beginning of the class you will have a "chocolate shot" of the liquor of your choice, then as a group you will choose what to use in your truffles. During the class we will enjoy the truffles we've made together with champagne and have a Q&A session:) You will take all your creations home. I've hosted many team building events for various SF companies, including AirBnB. I've also hosted bridal showers and birthday celebrations! We will be tasting a variety of CA dessert wines(ports) and Portuguese Porto accompanied by a selection of cheeses, nuts, crackers, and of course, truffles!! I am a scientific researcher with the passion for chocolate and love for wine! I grew up in a European Wine Country (Moldova) and my childhood influenced my truffle design. I approach truffle making as an artistic and scientific interplay. My truffles were sold in wineries and fundraisers. They make the best gift for Easter, Mother's day, Valentine's, and of course, birthday! I've taught truffle making classes for several years and I love personal interaction and meeting new people. I will teach you how to choose the right flavor profile using alcohol or spices, how to enhance the truffle from inside and outside as well as how to choose the right mold. I've been making truffles for over 15 years! My goal is to make you comfortable to start making your own truffles right away without any special equipment.

Please note that some weekend classes are longer and are $95/person because they include Port tasting and CA wine history. We will taste a few CA desert wines and use the winner in our truffles.
