Directed by the renowned chef Edson Yamashita, RYO Gastronomia's mission has been to provide a true gastronomic experience through which food satisfies the soul and the senses.

During this online experience, Chef Yamashita will demonstrate the best of Japanese cuisine in a delicate fashion. Each dish balances flavor, texture, appearance and colors, all connected with the seasons, as a tribute to the flavor curve that passes through the sweet, sour, bitter and salty, until reaching the fifth taste - the Umami! - the "special touch" that gives life to each dish. According to chef Yamashita, "the search for the umami is the basis of Japanese cuisine and RYO's goal is to search and provide this flavor in all of their ingredients, from the production stages to the guest's taste."

Chef Edson is the head chef of the renowned RYO Gastronomia restaurant in Sao Paulo and is one of the leading chefs in Japanese cuisine in Brazil. At age 15, chef Edson moved to Japan where he began his culinary career and learned the philosophy of master Sawamoto, a legendary icon of the Kampachi Sushi Ginza. After eight years, he returned home to continue his career in gastronomy.

This was our first time trying an airbnb experience and we loved it! Thank you Chef Edson and the production team for a one-of-a-kind experience. We picked this experience over the rest because it was an elegant recipe using simple, accessible ingredients we could find without too much trouble. Chef Edson is clearly a master of his craft, and I really valued the time he took to explain the purpose behind each step. One note for students: if you have a weaker stove (like I do), boil a pot of water of class beforehand so you don’t waste unnecessary time. All-in-all, we had a wonderful experience.

I really enjoyed this class. Chef Edson was very patient and generous with his time and although I didn't cook along with this one, I feel confident that I will be able to make this dish at home and it seemed that those who did cook along were able to do so without being rushed. Chef frequently checked in with people to make sure that they were caught up. I enjoyed this class for something different to do whilst in lockdown!

It is best to know Portuguese for this online experience. The chef was very good, the recipes were delicious and the dishes were well chosen. I learnt new flavors and how to achieve it. But not knowing the language is truly cumbersome. Wish I could understand Portuguesel

It was so cool to take a class with a Michelin starred chef. That alone was worth the whole experience. The final dish was delicious! Fair warning, this is not a class for beginners. It moved quickly and sometimes it was hard to follow the translations (I’m an English speaker, the direction was in Portuguese translated to English). But none of that stopped it from being a 10/10 experience that I’ll talk about for a long time!

Had a great class with Chef Yamashita. He was great at showing every step of the preparation and making sure everyone was on the same step before moving on. The pork kakuni came out so soft and flavorful and the wafu salad was delicious.

It was an amazing experience to cook with a Michelin chef! Chef Edson was very patient and kept the class together to get our mise en place ready. Then he taught us how to cook our dish properly. With his expert directions, both the Buta No Kakuni and salad with Wafu dressing came out nicely. I truly enjoyed this experience and would recommend it to everyone!
