The Jamaica Enchiladas class was fascinating and delicious! I had no idea that roselle (Jamaica in Mexico and other places) could be used for enchilada filling. We had only used roselle, which old timers also call “Florida cranberry” for jams and sauces, like at thanksgiving to go with turkey, instead of cranberry sauce. And I hadn’t ever used it dried except for making roselle ade, similar to making an aguas frescas, but adding some spices, like people do inJamaica and other people in the Caribbean. So, this was a real revelation that the roselle itself, after cooking, rehydrating and straining, can be used as a flavorful filling for vegetarian enchiladas, tacos, quesadillas, and so forth. And that the agua fresca can also be made into a salsa to go over the enchiladas! Diana is a true authority on Mexican cuisine. I will be looking to take more classes with her soon. Highly recommend!!!!!

Diana is an expert on Mexico’s culture! Not only did she learn so much from her family early in her life, but she is a culinary school graduate, chef, and has studied culinary anthropology as well. This is a very special and unique class! Also, she is so warm, welcoming, patient and an excellent teacher. I loved the tlacoyos! They’re so different from any Mexican food I had had before. The cactus dish was fantastic, too. I recommend this class to anyone who wants to learn more about Mexican food history and cooking. You won’t be sorry! Excellent class!!!!

Diana is warm, welcoming and knowledgeable! She made me feel like I was a guest in her home and made the cooking seem so easy and manageable. She was great with my daughter as well. I learned so much about not just cooking, but the history behind so many different traditional dishes and ingredients. I really learned a lot and had a great time! Definitely book her!
