2pm Pick up from locations around Samui. You will be driven to through the mountainous interior of Samui to Chilling Hill where the Jungle Kitchen is located in wild organic gardens surrounded by jungle on a mountain ridge in the centre of the island, in an area without modern development. 2.30pm Enjoy a welcome drink made from fruits of the gardens before joining a walk around the gardens to learn about, and harvest some of the abundant fruits, vegetables, herbs and spices growing around you for class . 2.45pm Enter the beautiful Jungle Kitchen which is designed as a working Thai kitchen from 50 years ago. Guests learn about the ingredients of today's dishes before starting cooking. Cooking is carried out with charcoal or gas using traditional tools and techniques. Guests will learn to cook three dishes, at least one of which will use a mortar and pestle for grinding spice and making a curry paste or salad. Dishes are chosen based on seasonal availability, guests (advance) requests, and a burning desire to add to the list of fantastic dishes in our recipes. 5pm Finish cooking and enjoy the a home cooked meal with your hosts on the balcony of the kitchen overlooking the jungle. 6pm There is still time for a quick stroll to the nearby viewpoint with romantic panoramic 270 degree views over jungle and over to Koh Phangan before departing with a unique souvenir of the day
My first job was when I was 8 years old, working in my grandmothers kitchen before and after school, helping to prepare big pots of curry for sale at the local markets. By the time I was ready to leave school I was fed up with cooking. My parents encouraged me to train as a teacher, but after graduating I realised that teaching young children Thai language was not for me and I found a job on the front desk of a top hotel. I became friends with the head hotel chef who often invited me into the kitchen after work and I soon developed a real passion for cooking. Over the next two decades I worked in, opened and owned a number of restaurants. Recently, I decided to open a cooking school with my partner Tom. We found a gorgeous wild organic garden in the middle of the Samui jungle at Chilling Hill. Now I'm back to teaching; cooking.

The ride to the Jungle Kitchen is something special. The route takes you to the top top of a mountain in the centre of Samui, then one km offroad along a scenic mountain ridge. Tamarind Tree Cooking School is located at Chilling Hill in large eclectic wild organic gardens and durian orchards in an area of natural beauty with little sign of modern development. Within walking distance is the Khun Si waterfall and panoramic viewpoint.
