Making our way to my gorgeous chef kitchen at my building looking over Albert Park & outdoor swimming pool, we will master the fine art of Korean cuisine. You'll learn: 1. Fermented Kimchi 2. Fail-proof Korean rice & Korean friend rice 3. Kimchi soup 4. Kimchi pancake 5. Samgyetang - Chicken soup These recipes were passed on by my teacher who is the last student of the last Master of Culinary for the palace of the last King in Korea. I'll show how to ferment traditional Korean Kimchi which is the most important ingredient. I'll explain why it is god-health food. You can use this method to ferment basically anything. A funny saying: " I like my kimchi how I like myself, spicy and too hot for you" ;) We’ll cook Korean food with love and share delicious meals together whilst I give you an insight into one of the most coveted recipes in the world. I can't wait to not only show Korean cuisine to you but also our way of life and our Korean culture!
I’m the head pastry chef at Ezard which is a hatted fine-dining restaurant on Flinders Lane. I was born in Busan, a true Korean! I did several jobs growing up, pursued several careers, and invested in different small business. I have always had a strong desire to be a chef but it was not considered a stable career. However, my passion for cooking had led me to quit and follow my dream. I graduated prestigious Korean Institute of Traditional Food and Le Cordon Bleu. I used to work in many Korean, Italian and French fine-dining restaurants. I moved to Australia in 2013 to pursue my career. The reason why I want to do this workshop is to share my love for Korean cuisine and why Korean fermented Kimchi is truly a god-health food and is much under-the-radar on food map. I want to teach people how to use kimchi in several dishes. Let's cook!
We will eat together what we cook on the day. Selection of amazing traditional Korean dishes made with kimchi, pork, chicken,…
We will go to my home air-filled, state of art chef kitchen opposite Albert Park to start cooking. We will get to know each other with great food, conversations, and make new friends
Small container if you want to bring some kimchi home
Please inform me about your dietary requirements one day in advance. I will try to accommodate them if possible.
