Kimchi is spicy fermented cabbage, the most famous of Korean dishes. You will taste five kinds of kimchi, including white cabbage, mustard leaves, radish, short-term fermented cabbage, and long-term fermented cabbage. You'll also get an informative and interesting explanation about the process and the importance of the dish. Then for dinner we will have kimchi-jjim, which is a braised pork belly stew, made with long-fermented kimchi. To top it off, you will enjoy this whole meal with a wine pairing selected by me. You'll see just how kimchi and certain wines can make a great match. I'll teach you how to pair wine with kimchi and Korean food in general, so you can try it for yourself.
