We'll be preparing together the ultimate Italian vegetarian meal! The protagonist of the meal will be PICI: southern Tuscany best-kept secret. It's a very simple type of hand-made pasta that looks like thick spaghetti, holds sauces incredibly well, and tastes absolutely amazing. I'll show you exactly how my grandma would make it, but you guys are going to do all the work! In order to enjoy pici at its fullest, we'll also be cooking two great sauces: 1) a scrumptious fully vegetarian BOLOGNESE; 2) and AGLIONE - a lovely garlicky tomato sauce which goes perfectly with pici. You'll then be able to refresh your palates with two delicious SALADS, one from the north and one from the south of Italy, served with sourdough bread. Both salads are pretty straightforward but go a long way! To wrap things up the best way, I will show you the best TIRAMISU recipe in the whole world... my mum's! No whipped cream, no liquor, just the right ingredients in the right amount. Pure finger-licking awesomeness. And if you can handle coffee... there will be coffee. The one and only, homelike, everyday Italian, Moka pot coffee. I'll give you all the tips for making it perfect. It goes without saying that I am more than willing to accomodate special requests, even on the fly. We can change recipes, cook risotto, make pesto, look into vegetarian cuisine basics... You just have to ask! :)
I'm a born and raised Tuscan multipotentialite :) I studied philosophy and music, and played and taught guitar for many years. In my mid-twenties I adopted a vegetarian diet and became very interested in nutrition. I then left Italy for England, and worked as a barista, commis-chef, and sous-chef in a variety of places. I spent most of my years in the UK working as a chef and educator at Brockwood Park School, an international boarding school renowned for its delicious vegetarian world cuisine. There I had the chance to teach kids about Italian cuisine, and learn a whole lot about different culinary traditions and all sorts of alternative diets. I took bread-making classes, and even went all the way to Thailand to learn Thai vegetarian cooking. Yet I have to find something more humbling than watching my grandma prepare Sunday lunch!

The cooking class will take place at Mo's: my lovely super-tiny apartment :) But don't worry for lack of space: the kitchen is actually pretty large, and extremely functional! The address is very easy to find - just a 5 min walk from Porta al Prato. Being very close to Cascine park and river Arno, it also makes for a beautiful digestive walk, for when the class is over!
