Aloha and Welcome as we gather around the information table at Sharkey's 100-year old farmhouse in the historic plantation village of Papaikou. Sample our freshly brewed 100% Hawaiian coffee or cacao tea, grown right here on the farm. From there we begin an easy walk through our orchards where you'll learn about Hawaiian coffee growth and production. Interwoven behind the coffee are rows of cacao trees. Depending on the time of year, you can usually see tiny flowers and large, multi-colored pods hanging from trunks and branches. Long, heavy vanilla vines grow up the cacao trees, nature's perfect trellis! We'll show you how each vanilla orchid is delicately hand-pollinated to produce long "hands" of vanilla beans. We'll then proceed to the "Slab" where the pods are 'cracked' before the fermentation process. Next we move into the greenhouse where flats of newly planted seedlings just beginning their journey grow alongside large screens filled with coffee and cacao beans slowly drying to perfection. Finally we'll move into our certified Chocolate Kitchen where the Magic happens! Who wants a taste? Free samples!

Parents, please supervise young children at all times and be respectful of the areas marked Private. (Zen Treehouse Retreat is for registered guests only). There are no stairs to navigate and the restroom is equipped with handrails. We are a working farm and invite you to enjoy your surroundings!

Ana Antilla is an Airbnb Super Host, tour coordinator and professional chef who facilitates ceremonial cacao preparation and serves up lunch on the lanai of our 100-year old farmhouse. Tom Sharkey is a retired Biology teacher and full-time farmer, chocolatier and tour business owner. Tom's been growing coffee, vanilla and cacao (chocolate) on the Big Island's Hamakua Coast for over 25 years. These favorite crops are relatively new to Hawaii and Tom's made it his mission to share his knowledge and experience with others interested in learning and cultivating pure Hawaiian-grown products. Shark's Tours specializes in localized agri-tourism, educates guests on plant propagation, fermentation, processing and production along with the art of bean-to-bar chocolate making in our certified farm kitchen.

If you love things that are go with the flow this will be great for you! We had an amazing time and it was much more fun and hands on than we were expecting. Shark (Tom) is a very interesting person and is a joy to listen to! He will answer all of your questions. Tip: If you want the experience to be extra awesome be sure to get along with the other guests!

The Shark provided our most memorable experience of our 10 days on the Big Island. In a land of big personalities, that’s saying a lot! He is so relatable, and will not stop until he answers any and all questions you have. He was so generous with snacks, drinks, and gifts. We felt as though his land belonged to us for the three or so hours we were there. We learned hands on about the chocolate making process, and got my more specific questions about vanilla growing answered. He is an excellent teacher. I would absolutely recommend this tour to anyone who wants to learn about the unique agriculture of Hawaii, in great surroundings, but a truly hilarious story teller.

Shark and Steve made us feel welcome from start to finish. Incredible experience and would go back again!! Great place for a family with a five year old to stay engaged. They provided a learning opportunity for so many things, from geologic interest of the islands, invasive plant species, to roasting cacao beans. The smell of the vanilla is something you will never forget.
