Have you ever wondered how the King of Italian cheeses is made? What is the feeding of Parmigiano-Reggiano dairy cows, how much milk do they produce, how is it stored and delivered to the dairy?
Have you ever wondered what the ingredients are, how the processing takes place?
We will follow the cheese production process step by step, side by side with the expert master cheesemaker.
We will see the master cheese maker’s deft movements during the breaking of the curd with the “spino” and the delicate cooking phase during which the heat is skillfully controlled to expel water from the granules.
We will discover ancient tools and modern materials, method and passion, a magical combination that leads to the creation of Parmigiano-Reggiano cheese every morning.
We will observe the light yellow reflections on the water in the silent salting room and the infinite shades of yellow in the fragrant warehouse! Visiting a Parmigiano cheese dairy is a joy for all the senses and a memory that can last a lifetime.
At the end of this experience, Parmigiano-Reggiano cheese will always be a taste which brings back memories of the passion and the marvels encountered along the way.

I'm a fully licensed guide, born and raised in Parma, working in the fields of tourism, culture and education within the territory of the Emilia Romagna region for over 11 years. • We will visit an authentic Parmigiano-Reggiano cheese dairy and the visit will be followed by tasting of 12 months, 24 months and 36 months old Parmigiano-Reggiano cheese
• We will visit a Traditional Balsamic Vinegar Producer and the visit will be followed by tasting of 12 years old, 20 years old and 25 years old Traditional Balsamic Vinegar and 3 years old and 10 years old balsamic condiments.

Michelle was a fabulous dairy and balsamic tour guide. We loved the experience and won't have wanted anything different. It was definitely one of my favorite days we had in Italy. I would recommend everyone if you are in Parma to do this tour! I learned so much more then I would have if I just went alone.

Very nice and unique experience. Barbara was our guide, she was very knowledgeable. Both the cheese and balsamic experiences were exceptional, and we were the only people there. The cheese master also gave us a great show, and Marco did the balsamic tasting himself. It was very special

Michelle is an outstanding resource and wealth of knowledge on the Parma region and culture. Her passion was clear to see as she personalized an amazing experience for my family. This was such a wonderful experience! We learned so much about Parmigiano-Reggiano Cheese and Traditional Balsamic Vinegar that we now feel like we can utilize our newborn skills to verify the use of actual traditional products. We can’t thank Michelle enough for taking us to the cheese farm to play with the baby cows or meeting Mario and his love for Balsamic Vinegar and how each were explained in such detail. We would highly recommend this tour should you wish to learn more about this special cheese or vinegar because this definitely shed some light on what we realized how little we knew about the production and distribution of these items.
