Upon arrival you will be greeted and served with Caribbean tea and cake. With Caribbean music in the background setting the ambience. Then given a brief introduction to the history and art of Caribbean cooking. There will have a master class and demonstration of two Caribbean dishes - traditional and authentic jerk chicken (made from scratch), fried plantains and rice and peas, with coleslaw. Tips and short cuts to Caribbean cooking will be given and all your questions answered. Tea, coffee and cold drinks will be available throughout the session.

I was raised in a British-Caribbean home, and have been cooking since I was a teenager, I am now in my 40s and I consider myself an expert cook. I taught as a college/University lecturer and private tutor for 16 years. So I get to combine my 2 passions teaching and food. I am a self-confessed foodie. I love the fact that Caribbean food is the original fusion food—a blend of many cultures—which is reflected in my own heritage. Caribbean food is an eclectic mix that can be modified to suit any palate, and it must be shared with others.

We will be at my home kitchen in the town of Broxbourne, Hertfordshire, about a 15-mile train ride north of London. We will engage in conversation about the history of the food, with Caribbean music playing in the background as we devour, what we have prepared in the Master Class. Recipe worksheets, herbs and spices lists with photos and a list of supermarkets where they can be purchased will be given to each guest.
