Be ready to drink coffee ! The workshop will start with an introduction to the History of Coffee. From the legendary goat that discovered coffee in Ethiopia to the first coffee shop A cup of coffee is the result of 3 characters: the farmer, the roaster, and the barista. We will take a journey into the coffee chain from bean to cup. We will start by a tasting flight of 3 different origins where I'll introduce the farming practices. For the next tasting, we will brew and taste the same coffee processed in 2 different ways. After this first flight, we will explore the importance and impact 'roasting' has on the quality of the coffee and what differentiate specialty coffee. This tasting will widen your horizon on how roasting can impact the taste of one coffee. For the second part of the workshop will be focused on the barista's role. I will introduce 2 different brewing methods of home brewing and teach you how to make coffee like a pro by sharing you all the explaining and science behind. Finally, we will end up with a last coffee with a short Q&A session where I will make sure you have all the tools and knowledge you need to make excellent coffee at home.
I remember the first coffee I brew at the age of 7 – a dark roasted Turkish coffee. Although this first sip gave me a bitter memory of coffee, sharing it with others added some sweetness to it. Learnt about coffee at the farm in Colombia, I started to work as a barista in Brazil. In the meantime, I obtain my master degree in thermodynamics in France. I believe that we don’t know what we don’t know. In 2017, I launched a Specialty Coffee Tasting Workshop in London, UK to bring awareness and shed lights on what, how and why Specialty coffee is. Like you I am frustrated when my brew doesn't match what I had in the cafe. Hence, experience and sensory became my focus, with hours of SCA training and competitions. Moved to Houston, Texas in 2019, I launched Memli Coffee Lab and proposed an innovative approach to coffee roasting.
We will taste a total of 8 coffees in 4 different tasting flights
Our workshop will be located near Downtown in a modern collaborative sharing boutique - The Annex HTX. Reception and parking are available to accommodate everyone.
